Fried rice does not always need fiery spices or a long list of ingredients to feel satisfying. This version keeps the flavors gentle and balanced, combining sweet white crab meat with garlic, ginger, spring onions and a simple savory seasoning.
The secret lies in patience at the beginning. Instead of frying the aromatics quickly over high heat, they are slowly warmed in oil until tender and fragrant. Once the heat is increased, the rest of the dish comes together in only a few minutes.
Ingredients You Will Need
For the fried rice:
4 tbsp neutral oil
4 garlic cloves, peeled and finely sliced
30 g fresh ginger, peeled and cut into thin matchsticks
1 bunch spring onions, trimmed and sliced
500 g cooked jasmine rice
¼ tsp white pepper
2 tbsp fish sauce
1½ tbsp soy sauce
Sea salt, to taste
2 large eggs, lightly beaten
150 g white crab meat
Cooked and completely cooled jasmine rice gives the best texture. Freshly prepared rice contains more moisture and can become soft or sticky in the pan. Ready-cooked rice can also be used when time is limited.
Slowly Cook The Aromatics
Pour the neutral oil into a wok or large frying pan. Add the sliced garlic, ginger and spring onions before placing the pan over low heat.
Cook gently for around 8–10 minutes, stirring occasionally.
The aim is not to deeply brown the ingredients. Instead, the oil should gradually absorb their flavor while the spring onions soften and the garlic and ginger become lightly golden.
This slower method creates a fragrant base without introducing bitter or overly toasted notes.
Add The Rice And Seasoning
Increase the heat to medium-high and add the cooked jasmine rice.
Use a spatula or wooden spoon to break apart any clumps, then stir-fry for about a minute so the grains become hot and lightly coated in the aromatic oil.
Sprinkle over the white pepper, then add the fish sauce and soy sauce.
Continue frying for another 2 minutes, tossing everything regularly. The rice should be piping hot and evenly seasoned without becoming wet or heavy.
Taste before adding extra salt, as both soy sauce and fish sauce already contribute plenty of seasoning.
Create Ribbons Of Egg
Season the beaten eggs lightly, then pour them directly over the hot rice.
Leave them undisturbed for about a minute so they begin to set. Once the edges look slightly firm, gently drag the egg through the rice.
Rather than producing large pieces of scrambled egg, this method creates thin ribbons running throughout the dish. The result is softer and more evenly distributed.
Fold In The Crab
Add the white crab meat and gently fork it through the rice.
Cook for only another minute. Crab meat is delicate and usually already cooked, so it only needs enough time to heat through.
Avoid stirring too aggressively, as keeping some larger pieces intact gives the finished dish a better texture.
Taste once more and adjust with a little extra soy sauce, fish sauce or salt if necessary.
Serve Straight From The Pan
Fried rice is best served immediately while the grains are hot and separate and the crab remains tender.
The gentle combination of ginger, garlic and spring onion keeps the dish fragrant without overpowering the seafood. A simple cucumber salad or lightly steamed green vegetables make an easy accompaniment.
With cooled rice prepared in advance, the entire meal can be finished quickly, making it particularly useful for busy evenings when something comforting is needed without a complicated cooking process.
