A delicious chocolate cake doesn't always need flour. This rich, naturally gluten-free dessert combines ground walnuts, sweet dates and dark chocolate to create a wonderfully soft texture with a deep, satisfying flavour.
Freshly brewed espresso adds a subtle coffee note, balancing the sweetness of the dates and chocolate. Despite its generous ingredients, the cake remains surprisingly light thanks to carefully whipped egg whites.
Perfect for family celebrations or an indulgent afternoon treat, this flourless cake looks elegant with nothing more than a light dusting of cocoa powder.

Why This Flourless Cake Works

Walnuts replace traditional flour, giving the sponge its structure and delicate nutty flavour. Choosing fresh walnuts is important because older nuts can develop an unpleasant bitterness.
Dates contribute natural sweetness and moisture, while dark chocolate creates a rich, almost brownie-like flavour.
Espresso deepens the chocolate notes without making the cake taste overwhelmingly of coffee.
The final ingredient that makes a difference is whipped egg whites. Folding them gently into the batter creates a lighter texture than the dense consistency often associated with flourless cakes.

Ingredients For Chocolate Walnut Cake

Servings: 8–10
Preparation time: 10 minutes
Total cooking time: Approximately 1 hour 30 minutes, plus cooling
Difficulty: Medium
150g unsalted butter, plus extra for greasing
150g pitted dates
120ml freshly brewed espresso
200g shelled walnuts
1 tablespoon cocoa powder, plus extra for decorating
1 teaspoon ground cinnamon
¾ teaspoon baking powder
½ teaspoon fine sea salt
100g dark chocolate
5 large eggs, separated
75g light brown sugar
1 teaspoon vanilla extract
75g caster sugar
You will also need a 20cm round cake tin with a removable base, baking parchment and a food processor.

How To Make The Perfect Flourless Cake

Step 1: Prepare the dates and walnuts.
Grease the cake tin and line it with baking parchment.
Place the dates in a bowl, pour over the hot espresso and leave them to soften.
Meanwhile, process the walnuts until finely ground, taking care not to turn them into an oily paste.
Transfer to a bowl and combine with the cocoa powder, cinnamon, baking powder and salt.
Step 2: Prepare the chocolate mixture.
Blend the softened dates and espresso into a smooth purée.
Preheat the oven to 180°C, or 160°C for a fan oven.
Melt the butter and dark chocolate together in a heatproof bowl over gently simmering water. Stir until smooth, then allow to cool slightly.
Step 3: Make the batter.
Beat the egg yolks with the brown sugar for approximately three minutes until pale and thick.
Gradually add the melted chocolate mixture, followed by the date purée and vanilla.
Gently fold in the ground walnut mixture until evenly combined.
Step 4: Whisk the egg whites.
In a clean, dry bowl, whisk the egg whites until foamy.
Gradually add the caster sugar and continue whisking until medium peaks form.
Fold one-third into the chocolate batter to loosen it, then carefully incorporate the remainder without removing too much air.
Step 5: Bake the cake.
Transfer the batter to the prepared tin and smooth the surface.
Bake for 55–60 minutes, until the edges are set and the centre retains a slight wobble.
A skewer inserted into the middle should come out with a few moist crumbs.
Leave the cake to cool completely in its tin before removing it.

Tips For A Beautiful Finish

Avoid overprocessing the walnuts, as their natural oils can make the mixture heavy.
For the lightest texture, fold the whipped egg whites into the batter using slow, gentle movements.
Once cooled, dust the cake with cocoa powder and cut into slices.
Serve with a spoonful of crème fraîche or poached pears for an elegant finishing touch.
With its rich chocolate flavour, tender crumb and naturally sweet date filling throughout the sponge, this homemade dessert offers an irresistible alternative to traditional flour-based cakes.
