Sometimes the most satisfying dinners begin with familiar ingredients prepared in an unexpected way. This Turkish-inspired pasta combines juicy minced meat, fragrant spices and a refreshing yoghurt dressing to create a meal full of contrasting flavours.
The recipe features cumin, garlic, dried mint and a touch of lemon. The finishing ingredient is warm butter infused with chilli and sumac, giving the pasta a distinctive aroma and pleasant acidity. Large pasta tubes work particularly well because they hold the thick meat sauce.

Why This Recipe Works

The secret lies in combining rich and refreshing ingredients. Minced meat provides a savoury base, while red pepper paste adds depth and warmth.
Garlic yoghurt balances the spices, and lemon juice makes the finished dish taste lighter.
Preparation time: 10 minutes
Cooking time: 30 minutes
Servings: 4

Ingredients For The Pasta

400 g paccheri or rigatoni
500 g minced meat
1 large red onion
4 garlic cloves
2 tbsp olive oil
3 tbsp Turkish red pepper paste
3 tbsp tomato purée
1 tsp ground cumin
1 tsp dried mint
200 ml water
½ tsp sugar
Salt and black pepper, to taste

Ingredients For The Dressing

200 g thick natural yoghurt
2 garlic cloves
40 g unsalted butter
1 tsp chilli flakes
1 tsp ground sumac
Juice and zest of ½ lemon
15 g fresh dill

Prepare The Meat Sauce

Finely chop the onion and crush four garlic cloves. Heat the olive oil in a large frying pan over medium heat.
Add the onion and cook for approximately four minutes, stirring occasionally until softened.
Add the minced meat and break it into small pieces with a wooden spoon. Cook for seven to eight minutes, until browned and cooked through.
Stir in the garlic, cumin and dried mint. Cook for another minute until fragrant.
Add the red pepper paste, tomato purée and sugar. Mix thoroughly, then pour in 200 ml water.
Reduce the heat and simmer for approximately ten minutes, stirring occasionally. The sauce should become thick enough to coat the pasta. Season carefully, as pepper paste may already contain salt.

Cook The Pasta And Dressing

Bring a large saucepan of salted water to a boil. Add the pasta and cook according to the packet instructions until al dente.
Meanwhile, combine the yoghurt with two crushed garlic cloves, lemon zest and a little lemon juice. Stir until smooth and refrigerate until needed.
Melt the butter in a small frying pan over medium-low heat. When it begins to turn golden, add the chilli flakes and sumac.
Stir briefly and remove from the heat.

Bring Everything Together

Reserve a small cup of pasta cooking water before draining.
Add the pasta to the meat sauce and toss gently. If necessary, pour in a little reserved water to achieve a smoother consistency.
Divide between four bowls and add a spoonful of garlic yoghurt to each serving.
Drizzle with warm spiced butter, sprinkle with chopped dill and finish with a little lemon juice.

Useful Cooking Tips

For a milder flavour, replace some of the hot pepper paste with sweet red pepper paste. If paccheri is unavailable, rigatoni or penne make excellent alternatives. The meat sauce can be prepared a day in advance and stored in the refrigerator. Reheat thoroughly before mixing with freshly cooked pasta. Serve immediately to enjoy the contrast between the hot, aromatic sauce and cool yoghurt.
