A bowl of whipped ricotta can turn a handful of everyday ingredients into something surprisingly special. Its delicate, creamy flavour provides the perfect base for warm honey, aromatic rosemary and a subtle touch of chilli.
Add a few slices of crisp, olive oil-fried bread, and you have an appetiser that feels elegant without requiring complicated preparation. The beauty of this recipe lies in its contrasting textures.
The ricotta becomes wonderfully light after blending, while the golden bread provides a satisfying crunch. Sweetness, gentle heat and savoury garlic come together in every bite, making this dish ideal for sharing at the table.
Preparation time: 10 minutes

Ingredients

6 tbsp extra-virgin olive oil, divided
4 thick slices of crusty bread, halved diagonally
450g whole-milk ricotta
1 small garlic clove, finely grated
1 tsp salt, divided
3 tbsp hot honey
1 tsp fresh rosemary, finely chopped
Choose good-quality ricotta with a naturally creamy consistency. Whole-milk varieties work particularly well because they produce a fuller flavour and a smoother texture.
If hot honey is unavailable, gently warm ordinary honey with a small pinch of chilli flakes, then allow it to cool slightly before serving.

How To Make Whipped Ricotta

Step 1: Toast The Bread
Pour 4 tablespoons of olive oil into a large frying pan and warm over a medium-high heat.
Arrange the bread in a single layer, working in batches if necessary. Fry for 1–2 minutes on each side until the surface turns golden and develops a crisp crust.
Transfer the toasted slices to a plate lined with kitchen paper. Add another tablespoon of olive oil when needed for the remaining bread.
While the slices are still warm, season them lightly with ¼ teaspoon of salt.
Step 2: Create The Creamy Base
Add the ricotta, grated garlic and remaining ¾ teaspoon of salt to a food processor.
Blend until the cheese begins to lose its grainy appearance and becomes smooth.
Gradually add the final tablespoon of olive oil while continuing to blend. After another minute or two, the mixture should look light, glossy and beautifully creamy.
Scrape down the sides of the processor if necessary to ensure everything is evenly combined.
Step 3: Assemble The Appetiser
Spoon the whipped ricotta into a shallow bowl or onto a serving plate.
Using the back of a spoon, gently spread the mixture into soft waves, creating small grooves across the surface.
Drizzle the hot honey over the ricotta, allowing it to collect naturally in the folds.
Scatter the chopped rosemary on top and arrange the toasted bread alongside. Serve while the bread is still warm.

Secrets To A Silky Finish

The consistency of ricotta varies between brands. If yours contains excess liquid, drain it briefly through a fine-mesh sieve before blending.
Give the food processor enough time to transform the cheese into a smooth mixture. A short additional blend can make a noticeable difference.
For a more delicate flavour, reduce the garlic slightly. If you prefer a stronger sweet-and-spicy contrast, add an extra drizzle of hot honey just before serving.
Fresh rosemary brings a distinctive herbal aroma, so use it sparingly to avoid overwhelming the cheese.

Serving Ideas And Storage

This versatile appetiser works beautifully with sourdough, toasted baguette slices or warm flatbread. For a lighter alternative, serve it with cucumber, sweet peppers or crisp vegetable sticks.
You can prepare the whipped ricotta a few hours ahead and refrigerate it in a covered container. Allow it to soften slightly before serving, then add the honey and rosemary.
Leftovers should be refrigerated promptly and enjoyed within two days. Store the toasted bread separately to preserve its texture.
Whether served as a simple starter or the centrepiece of a sharing platter, this creamy ricotta dish brings a delicious combination of warmth, freshness and sweetness to the table.
