Chicken biryani is one of South Asia's most celebrated dishes, combining fragrant jasmine rice, succulent chicken and warming spices in a beautifully layered meal. Every spoonful offers a delicious mixture of textures, from fluffy rice to tender meat infused with ginger, garlic and saffron.
Inspired by traditional Hyderabadi biryani, this simplified recipe captures the dish's distinctive flavours without requiring hours of complicated preparation.
The secret lies in partially cooking the rice, preparing a richly spiced chicken mixture and finishing everything together in the oven.
This gentle cooking method allows the ingredients to develop their flavours while keeping the chicken wonderfully juicy.

What Makes This Biryani Special?

Hyderabadi biryani is famous for its aromatic spices, golden rice and slow-cooking technique known as dum, which involves sealing the cooking vessel to retain steam.
This version uses a similar principle but finishes the dish in the oven, reducing the risk of burning and making the process easier to manage.
Saffron provides the characteristic golden colour, while garam masala, Kashmiri chilli powder and fresh herbs create a complex, fragrant flavour.
Bone-in chicken thighs are particularly suitable because they remain tender during cooking and contribute richness to the dish.

Ingredients For Chicken Biryani

Servings: 4–6
Preparation time: 30 minutes
Total time: Approximately 2 hours
Ingredients:
½ tsp saffron threads, crushed
3 tbsp warm water
6 tbsp ghee or unsalted butter
2 large red onions, thinly sliced
1 jalapeño or serrano chilli, finely chopped
2 tbsp freshly grated ginger
1 tbsp grated garlic, approximately 3–4 cloves
1 tbsp garam masala
2 tsp Kashmiri chilli powder
3 bay leaves
1 cinnamon stick, approximately 7.5 cm long
2 cups (approximately 370 g) jasmine rice
1 cup chopped fresh coriander, including tender stems
½ cup (120 ml) full-fat plain yoghurt
2 tbsp fresh lemon juice
900 g bone-in chicken thighs, skin removed
Salt and freshly ground black pepper, to taste
If Kashmiri chilli powder is unavailable, combine 1½ teaspoons of sweet paprika with ½ teaspoon of cayenne pepper.

Prepare The Onions And Spices

Step 1. Preheat the oven to 200°C (400°F). Place the crushed saffron in a small bowl with three tablespoons of warm water and leave it to infuse.
Step 2. Melt the ghee in a large, heavy, ovenproof dish over medium heat. Add the sliced onions and cook for 15–20 minutes, stirring regularly, until deeply golden and beginning to crisp.
Step 3. Transfer half the onions to a plate lined with kitchen paper. Season lightly with salt and reserve for the rice.
Step 4. Add the chopped chilli, ginger, garlic, garam masala and Kashmiri chilli powder to the onions remaining in the dish. Stir in one teaspoon of salt and some black pepper.

Cook The Jasmine Rice

Bring approximately 1.9 litres of water to the boil in a separate saucepan. Add the bay leaves, cinnamon stick and one tablespoon of salt.
Rinse the jasmine rice thoroughly under cold water until the water runs clear. This removes excess starch and helps prevent the grains from sticking together.
Add the rice to the boiling water and cook for approximately five minutes, until partially tender but still firm in the centre.
Drain thoroughly, then gently combine with the reserved fried onions and half the chopped coriander. Adjust the seasoning if necessary.

Layer And Bake The Biryani

Step 1. Stir the yoghurt, lemon juice and remaining coriander into the spiced onion mixture.
Step 2. Add the chicken thighs, season with a little additional salt and turn them until evenly coated.
Step 3. Arrange the chicken in a single layer at the bottom of the dish. Carefully distribute the partially cooked rice over the top.
Step 4. Drizzle the saffron-infused water evenly across the rice.
Step 5. Cover the dish tightly with aluminium foil, then secure the lid to trap the steam.
Bake for approximately 40 minutes, until the rice is tender and the chicken is fully cooked. The thickest part of the chicken should reach at least 74°C.
Remove from the oven and allow the biryani to rest for 15 minutes before serving.

Tips For Perfect Chicken Biryani

Choose good-quality jasmine rice, preferably aged, as its grains tend to remain separate during cooking.
Allow the onions to develop a deep golden colour. Their natural sweetness provides an important foundation for the finished dish.
Avoid overcooking the rice before baking. It should still have some firmness because it will continue absorbing moisture in the oven.
For serving, gently lift portions from the dish to preserve the beautiful layers of golden rice and spiced chicken.

Serving And Storage Ideas

Chicken biryani pairs beautifully with cucumber raita, a refreshing yoghurt-based accompaniment that balances the warming spices. Mango chutney also adds a pleasant sweet and tangy contrast.
Leftovers can be refrigerated promptly in an airtight container. For rice safety, cool them quickly, ideally within one hour, and consume within 24 hours or freeze. Reheat thoroughly until piping hot throughout.
With its rich aroma, colourful presentation and tender chicken, this homemade biryani makes a memorable centrepiece for a family dinner or special occasion.
