Three Easy Filo Recipes

Filo pastry can look delicate and difficult, but ready-made sheets make it surprisingly easy to create impressive dishes at home. The secret is simply to work quickly, keep unused sheets covered with a damp cloth and brush each layer well so the pastry bakes into a crisp, golden shell.
These three recipes show how versatile filo can be. One becomes a rich cheese and spring onion pie, another turns into crunchy seeded crackers, while the third wraps a fragrant prawn filling in crisp pastry.

Cheese And Spring Onion Pie

With four cheeses, fresh herbs and a ruffled filo top, this pie looks elaborate but requires very little pastry technique.
Prep: 15 minutes
Cook: 1 hour, plus cooling
Serves 6
- 300g feta, crumbled
- 250g firm ricotta, crumbled
- 200g halloumi, grated
- 150g gruyere or sharp cheddar, grated
- 150ml single cream
- 3 eggs
- 25g chives, finely chopped
- 25g dill, finely chopped
- 25g flat-leaf parsley, finely chopped
- 1 large bunch spring onions (8–10), trimmed and finely sliced
- Finely grated zest of 1 unwaxed lemon
- Nutmeg
- Sea salt and black pepper
- 125g butter, melted
- 8 sheets filo pastry
- Sesame seeds, for scattering
Heat the oven to 180C (160C fan)/350F/gas 4. Mix the cheeses, cream, eggs, herbs, spring onions and lemon zest in a large bowl. Add a generous grating of nutmeg and season.
Line the base of a 20–23cm cake tin with baking paper and butter the sides. Lay in one filo sheet, leaving the edges hanging over the tin, brush with butter and add another sheet at a slight angle. Continue until six sheets cover the base and sides.
Spoon in the filling. Brush another filo sheet with butter, fold it in half and place it over the filling. Repeat with the final sheet, then fold the overhanging pastry inward to create a textured top.
Brush with the remaining butter, scatter with sesame seeds and bake for 45 minutes. Leave to cool for 15 minutes before serving.

Crispy Seeded Filo Crackers

These thin crackers need no kneading or rolling. Layers of filo, olive oil and aromatic seeds create an exceptionally crisp snack that works perfectly with hummus or another favourite dip.
Prep: 5 minutes
Cook: 20 minutes, plus cooling
Serves 6
- 1 tbsp fennel seeds
- 1 tbsp caraway seeds
- 1 tbsp coriander seeds
- 2 tbsp sesame seeds
- 2 tbsp nigella seeds
- 1 tsp pul biber
- ½ tsp onion powder
- 1 tsp flaky sea salt
- 4 sheets filo pastry
- 100ml extra-virgin olive oil
Lightly crush the fennel, caraway and coriander seeds in a mortar. Mix in the sesame seeds, nigella seeds, pul biber, onion powder and salt.
Heat the oven to 180C (160C fan)/350F/gas 4. Place a sheet of baking paper on your work surface and lay one filo sheet on top.
Brush with olive oil, add a second sheet and press gently to remove air pockets. Repeat with the remaining filo, brushing each layer with oil.
Cover the top evenly with the seed mixture and press it lightly into the pastry. Cut into slice, triangles or squares, transfer the baking paper to a tray and bake for 10 minutes. Leave the crackers to cool completely on the tray so they become crisp.

Saffron Prawn Filo Rolls

Saffron, chilli, coriander and lemon turn a simple prawn filling into something especially aromatic, while filo creates a light shell around each roll.
Prep: 15 minutes
Cook: 40 minutes, plus cooling
Makes 16 small rolls
- 2 tbsp olive oil
- 1 onion, peeled and very finely chopped
- 1 red pepper, finely chopped
- 1 carrot, coarsely grated
- 1 green bird’s eye chilli, finely chopped
- ½ tsp pul biber
- 1 pinch saffron threads, steeped in 1 tbsp warm water for 5–10 minutes
- 200g raw prawns, peeled and deveined
- 25g coriander leaves, very finely chopped
- Finely grated zest of 1 unwaxed lemon
- Juice of ½ lemon
- Sea salt
- 4 sheets filo pastry
- 75g butter, melted
- 1 tsp fennel seeds mixed with ½ tsp pul biber, for topping
Heat the olive oil over medium heat and gently cook the onion, pepper and carrot until soft but not browned. Add the chilli, pul biber and saffron, stir briefly, then remove from the heat.
Blitz half the prawns in a food processor and roughly chop the rest. Once the vegetables have cooled slightly, mix in both types of prawn, the coriander, lemon zest and juice, then season with salt.
Heat the oven to 180C (160C fan)/350F/gas 4. Brush one filo sheet with melted butter and cut it into four equal rectangles. Place a slice of filling along the short edge, leaving a 1½cm border on each side. Roll it up, folding in the edges as you go.
Place seam-side down on a lined baking tray and brush with more butter. Repeat with the remaining pastry and filling, then scatter over the fennel and pul biber mixture.
Bake for 15–20 minutes, until deeply golden and crisp. Serve warm or at room temperature.
