Step 1: Preparing the Biscuit Base
We start with the foundation of the cheesecake.
- Place 6 biscuits into a clean bag or bowl.
- Crush them into fine crumbs using a rolling pin or spoon.

- Pour melted butter into biscuit crumbs.
- Mix until all crumbs look evenly coated and slightly moist.
- Transfer the mixture into a 6-inch mold.

- Whip 200 g cream until it becomes thick but still soft. It should not become too stiff.
- Gently fold the whipped cream into the cream cheese mixture in three parts.
- Mix slowly each time to keep the texture light and airy.
- Remove the chilled biscuit base from the refrigerator.
- Pour the cream mixture on top.
- Tap the mold gently on the table to remove air bubbles and smooth the surface.
- Chill in the refrigerator for about 4 hours until fully set.
Step 3: Preparing the Blueberry Layer
This layer adds a fresh and slightly tangy fruit flavor.
Divide 120 g blueberries into two portions:
- 80 g for cooking
- 40 g for fresh texture
- Place 80 g blueberries in a small saucepan.
- Add juice from half a lemon.
- Heat gently and stir until berries soften and release juice.
- Add 30 g sugar and mix well until dissolved.
- Dissolve 5 g gelatin in 20 ml warm water separately.
- Add gelatin into the warm blueberry mixture and stir well.
- Turn off heat and mix in the remaining fresh blueberries.
- Let the mixture cool completely until slightly thickened.
Step 4: Final Assembly and Chilling
Now we bring everything together.
- Take the fully set cheesecake out of the refrigerator.
- Slowly pour the cooled blueberry mixture over the cream layer.
- Spread evenly across the surface.
- Return the cake to the refrigerator for another 1–2 hours for final setting.
To remove the cake smoothly:
- Wrap the outside of the mold with a warm towel for about 10–15 seconds.
- Gently lift the mold to release the cheesecake cleanly.
