Ingredients We Need

- Fine sugar: 85 g
For whipped cream layer:
- Whipping cream: 300 g
- Fine sugar: 20 g
For chocolate cream layer (optional):
- Dark chocolate: 60 g (melted)
- Whipping cream: 60 g
For chocolate topping:
- Dark chocolate: 60 g
- Whipping cream: 60 g
For decoration:
- Fresh strawberries: suitable amount

Step 1: Making the Cocoa Base

We start by adding 18 g cocoa powder into 90 g warm water or milk. Stir until fully dissolved. Then we mix in 70 g corn oil until smooth and glossy. This creates a rich cocoa base for the sponge cake.

Step 2: Adding Flour

We add 112 g low-gluten flour into the cocoa mixture. Stir gently until combined. The texture may look slightly thick at this stage, which is expected.

Step 3: Preparing Egg Yolks

We separate 6 eggs. Add all egg yolks into the cocoa batter. Mix until smooth and well blended. This step adds richness and improves texture.

Step 4: Whipping Egg Whites

We take 6 egg whites and gradually add 85 g fine sugar while whipping. Continue until soft peaks form. The mixture should feel airy and stable, which helps the cake rise.

Step 5: Combining the Batter

We whip 300 g cream with 20 g sugar until soft and smooth. This will be used between layers for a light texture.

Step 8: Making Chocolate Cream (Optional)

We melt 60 g dark chocolate and mix it with 60 g cream. This creates a richer filling for contrast in flavor.

Step 9: Assembling the First Layers

We place the first sponge layer on a plate.
- Spread whipped cream evenly
- Add sliced strawberries
- Cover with another thin layer of cream
This combination creates a fresh and soft taste.

Step 10: Building More Layers

We repeat the layering process. In one middle layer, we can replace whipped cream with chocolate cream for deeper flavor. Strawberries are added between layers for freshness and balance.

Step 11: Completing the Structure

We continue stacking all sponge layers. The top layer is covered with a thin layer of whipped cream. The sides are left slightly visible to show the layered structure clearly.

Step 12: Chocolate Topping

We mix 60 g melted dark chocolate with 60 g cream. This smooth mixture is gently spread on the top center of the cake.

Step 13: Decoration with Strawberries

Fresh strawberries are placed on top of the chocolate layer. We can also add light decorative lines using extra chocolate mixture for a simple finishing touch.

Final Result and Serving
